Austrian Plum Sheet Cake (Zwetschgenfleck)
A traditional Austrian sheet cake made from a simple yeast dough, topped with Italian plums and cinnamon sugar.

Ingredients
- 1 kg Italian plums
- 500 g Flour
- 1 piece Dry yeast
- 100 g Butter
- 3 piece Eggs
- 250 ml Milk
- pinch Salt
- 50 g Powdered sugar
- 2 tbsp Sugar
- 1 tsp Cinnamon
Instructions
- 1. Sift the flour into a bowl and mix with the dry yeast.
- 2. Add eggs, milk, salt, powdered sugar, and butter flakes. Knead everything into a smooth, supple dough.
- 3. Cover the dough and let it rise in a warm place for about 30 minutes.
- 4. Preheat the oven to approx. 180 °C (350 °F) top/bottom heat.
- 5. Wash, halve, and pit the plums.
- 6. Grease a baking sheet with oil or line it with parchment paper.
- 7. Roll out the yeast dough and place it on the baking sheet. Press it firmly to the edges with your hands.
- 8. Arrange the plums in straight rows with the cut side facing up on the dough and press down lightly.
- 9. Bake on the middle rack for approx. 30 minutes.
- 10. Mix 2 tbsp sugar with 1 tsp cinnamon and sprinkle over the cake while it is still hot.
