Apricot Dumplings with Quark Dough
A sweet delicacy from Austrian cuisine: apricot dumplings made from fluffy quark dough, served with a golden-brown breadcrumb and sugar mixture.

Ingredients
- 500 g Low-fat quark
- 2 piece Eggs
- 140 g Margarine
- 260 g Flour
- 2 pinch Salt
- 12 piece Apricots
- 12 piece Sugar cubes
- 2 tbsp Butter
- 280 g Breadcrumbs
- 4 tbsp Sugar
- 10 tbsp Powdered sugar
Instructions
- 1. For the quark dough, cream the margarine (or butter) and eggs in a bowl until fluffy.
- 2. Add the quark, flour, and salt, and knead everything well until a smooth dough forms.
- 3. Divide the dough into 12 equal pieces and flatten them into round discs with floured hands.
- 4. Wash and dry the apricots, cut them in half, and remove the pits. Place a sugar cube in the center of each apricot and put the halves back together.
- 5. Place the filled apricots onto the dough pieces and wrap the dough around them to form even dumplings.
- 6. Bring a large pot of salted water to a boil. Carefully add the dumplings and let them simmer over low heat for about 10 - 12 minutes until they float to the surface.
- 7. Meanwhile, melt 2 tbsp of butter in a pan. Add the breadcrumbs and sugar, and toast until golden brown, stirring constantly.
- 8. Lift the finished dumplings out of the water, drain briefly, and roll them directly in the hot breadcrumb-sugar mixture.
- 9. Dust with powdered sugar before serving.
