Greek Village Salad
Horiatiki done properly: ripe tomatoes, crisp cucumber, sweet onion and a thick slab of feta — no lettuce, no fuss.

Ingredients
- 4 piece ripe tomatoes, cut into wedges
- 1 piece cucumber, thickly sliced
- 1 piece green bell pepper, sliced into rings
- 0.5 piece red onion, thinly sliced
- 100 g Kalamata olives
- 200 g feta, in one slab
- 4 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 pinch salt and black pepper
Instructions
- 1. Pile the tomatoes, cucumber, bell pepper and red onion into a wide shallow bowl.
- 2. Scatter over the olives.
- 3. Lay the slab of feta on top — leave it whole, that's the traditional way.
- 4. Drizzle generously with olive oil and the red wine vinegar.
- 5. Sprinkle the feta and salad with dried oregano, a little salt and plenty of black pepper.
- 6. Serve immediately with crusty bread to mop up the juices.
