Pasta Asciutta
A classic recipe for Pasta Asciutta with a hearty meat and tomato sauce and fresh soup vegetables.

Ingredients
- 250 g Spaghetti
- 2 cloves Garlic cloves
- 2 pieces Onions
- 250 g Soup vegetables
- 2 tbsp Olive oil
- 400 g Ground meat
- Salt
- Pepper
- 1 tbsp Oregano
- 125 ml White wine
- 400 g Tomatoes
- 1 tbsp Tomato paste
- Salt
- Pepper
- 1 piece Basil sprig
- Lemon juice
- 2 tbsp Parmesan
Instructions
- 1. Peel and finely chop the onion and garlic. Also peel the soup vegetables and cut them very finely or grate them.
- 2. Heat olive oil in a pot and sauté the prepared vegetables until translucent.
- 3. Add the ground meat and brown well while stirring.
- 4. Season with salt, pepper, and oregano. Deglaze with white wine (or water).
- 5. Stir in the peeled tomatoes and tomato paste. Cover the sauce and simmer over low heat for about 40 minutes, stirring occasionally.
- 6. In the meantime, cook the spaghetti in a large pot of salted water until al dente.
- 7. Finally, season the sauce to taste with salt, pepper, fresh basil, and a splash of lemon juice.
- 8. Drain the spaghetti, arrange on plates, pour the sauce over them, and serve with grated Parmesan.
