Pancakes with Maple Syrup
A classic recipe for fluffy pancakes that become particularly light by folding in whipped egg whites, traditionally served with maple syrup.

Ingredients
- 250 g flour
- 2 tsp baking powder
- 2 pieces small eggs
- 2 pkgs vanilla sugar
- pinch salt
- ml milk
- 2 tbsp butter
- 4 tbsp maple syrup
Instructions
- 1. Carefully separate the eggs. Whip the egg whites in a clean bowl until stiff peaks form.
- 2. Mix the egg yolks thoroughly with the vanilla sugar, flour, and baking powder.
- 3. Add a splash of milk as needed and continue stirring until the mixture reaches a nice creamy consistency.
- 4. Gently fold the whipped egg whites into the batter to maintain the fluffiness.
- 5. Melt butter in a pan. Pour in small portions of batter (approx. 8-10 cm in diameter).
- 6. Fry over medium heat for about 5 minutes on both sides until golden brown.
- 7. Drizzle the pancakes immediately with maple syrup and serve.
