Mulitas
Grilled steak mulitas are an easy, satisfying meal featuring tender steak, spiced onions, and gooey melted cheese sandwiched between two crispy tortillas.

Ingredients
- 2 tbsp olive oil
- 0.5 lb flank steak
- 1 piece lime
- 0.5 tsp salt
- 0.25 tsp ground black pepper
- 1 piece small onion
- 3 clove garlic
- 0.5 tsp cumin
- 4 tsp olive oil
- 8 piece corn tortillas
- 1 cup shredded Monterey jack cheese
- 1 piece jalapeño pepper
- 1 piece medium avocado
- 1 piece roma tomato
- 2 tbsp chopped cilantro
Instructions
- ### For the Steak
- 1. In a large skillet, heat 1 tablespoon of oil over medium-high. Add the steak, lime zest and juice, salt, and pepper.
- 2. Cook, stirring occasionally, until browned, about 5 minutes.
- 3. Transfer the steak to a bowl using a slotted spoon, reserving the drippings in the skillet.
- 4. Add the onion, garlic, cumin, and the remaining 1 tablespoon of oil to the skillet.
- 5. Cook, stirring often until the onion is tender and browned about 5 minutes.
- 6. Add the onion mixture to the steak and set aside.
- ### For the Mulitas
- 1. In a 10-inch griddle or cast-iron skillet, heat 1 teaspoon oil over medium.
- 2. Add 1 tortilla, sprinkle with 2 tablespoons cheese, and top with about a ¼ cup of steak and onions.
- 3. Sprinkle the steak with 2 tablespoons of more cheese, and top with 1 tortilla.
- 4. Cook, gently pressing down on the tortilla occasionally with a spatula, until golden brown, about 2 minutes.
- 5. Flip, and continue cooking, until the cheese is melted and the tortilla is golden brown on the other side, about 2 minutes more.
- 6. Repeat with remaining oil, tortillas, cheese, steak, and onion.
- 7. Top the mulitas with jalapeño, avocado, tomato, and cilantro to serve.
