Original NYT Plum Torte
A legendary, bittersweet dessert that marks the transition from summer to autumn. This simple yet elegant cake features jammy purple plums nestled in a buttery batter.

Ingredients
- 150 g sugar
- 115 g unsalted butter
- 125 g all-purpose flour
- 1 tsp baking powder
- pinch salt
- 2 pieces eggs
- 24 pieces purple plums
- sugar
- ml lemon juice
- 1 tsp cinnamon
Instructions
- 1. Preheat oven to 175 degrees C (top/bottom heat).
- 2. In a bowl, cream the sugar and softened butter until fluffy.
- 3. Add the sifted flour, baking powder, salt (if using), and eggs. Mix well until a smooth batter forms.
- 4. Pour the batter into a greased springform pan (20, 23, or 26 cm diameter).
- 5. Place the plum halves skin-side up on top of the batter.
- 6. Sprinkle lightly with sugar and lemon juice (adjust according to the sweetness of the fruit). Sprinkle with about 1 teaspoon of cinnamon.
- 7. Bake for approximately 1 hour.
- 8. Remove from the oven and let cool. Serve at room temperature, lukewarm, or chilled. Optionally serve with whipped cream.
