Sopa Paraguaya Cornbread

Ingredients
- 300 g Onions
- 50 ml Corn oil
- 2 Stück Eggs
- 300 ml Milk
- 100 g Corn
- 250 g Corn flour
- 1 TL Baking powder
- Salt
- Pepper
- 250 g Mild cheese
Instructions
- 1. Peel the onions, cut them in half, and slice them into fine strips.
- 2. Heat the oil in a pan and sauté the onions until translucent (do not let them brown).
- 3. Thoroughly grease a baking dish (approx. 20x20 cm) with a little oil. Preheat the oven to 180 °C (top/bottom heat).
- 4. In a mixing bowl, whisk the eggs until frothy. Then stir in the milk, sautéed onions, and optional corn.
- 5. Mix the baking powder with the corn flour and gradually incorporate it into the liquid until a thin batter forms. Season with salt and pepper.
- 6. Fold the cheese in large pieces into the batter.
- 7. Let the batter rest for about 10 minutes to allow the flour to swell.
- 8. Pour the batter into the prepared dish and bake for about 35 minutes until the bread is golden brown. Perform a toothpick test before removing from the oven.
