Slow Cooker Beef Tacos
Low-key and easy beef brisket tacos made tender in a slow cooker, perfect for a stress-free taco night.

Ingredients
- Cooking spray
- 2 pieces medium onions
- 3 cloves garlic
- 2 pieces chipotle in adobo sauce
- 3 tbsp adobo sauce
- 3 lb beef brisket
- 2 tbsp Montreal steak seasoning
- 1 tsp cumin seeds
- 0.25 cup water

Instructions
- 1. Lightly grease a 6-quart slow cooker with cooking spray. Add the chopped onions and garlic to the bottom.
- 2. In a small bowl, stir together the chopped chipotle peppers and the 3 tablespoons of adobo sauce.
- 3. Season the beef brisket evenly with the steak seasoning and crushed cumin, then rub the chipotle-adobo mixture all over the meat.
- 4. Place the beef on top of the onions and garlic in the slow cooker. Pour in 1/4 cup of water.
- 5. Cover and cook on low until the beef is very tender, approximately 7 to 9 hours.
- 6. Transfer the beef to a cutting board and shred using two forks.
- 7. Return the shredded beef to the slow cooker and stir to combine with the juices and onions.
- 8. Serve warm in corn tortillas with your choice of toppings.
