Creamy Tomato Basil Soup
A velvety roasted-tomato soup finished with cream and fresh basil — the ultimate companion to a grilled cheese.

Ingredients
- 1 kg ripe tomatoes, halved
- 1 piece onion, quartered
- 4 cloves garlic, unpeeled
- 3 tbsp olive oil
- 700 ml vegetable stock
- 1 tbsp tomato paste
- 1 tsp sugar
- 100 ml heavy cream
- 1 handful fresh basil leaves
- 1 pinch salt and black pepper
Instructions
- 1. Heat the oven to 200 °C. Toss the tomatoes, onion and garlic with olive oil, salt and pepper on a baking tray.
- 2. Roast 25–30 minutes until soft and lightly caramelised. Squeeze the garlic out of its skins.
- 3. Tip everything into a pot. Add the stock, tomato paste and sugar, and simmer 5 minutes.
- 4. Blend until completely smooth with a stick blender (or in batches in a jug blender).
- 5. Stir in the cream and most of the basil. Warm through gently without boiling and adjust the seasoning.
- 6. Serve topped with the remaining basil and a swirl of cream.
