Ingredients
- 200 g Pasta
- 1 tbsp Olive oil
- 200 g Shrimp
- 1 tbsp Butter
- 3 cloves Garlic
- 0.25 tsp Chili flakes
- 180 ml Heavy cream
- 50 g Parmesan
- 1 tbsp Lemon juice
- White wine
- Salt and pepper
- 2 tbsp Parsley
Instructions
- 1. Cook the pasta in well-salted water until al dente. Reserve about 60 ml of pasta water before draining.
- 2. Heat olive oil in a large skillet over medium-high heat. Pat the shrimp dry and season with salt and pepper. Sear for about 1 minute per side until cooked through. Remove from the skillet and set aside.
- 3. Reduce the heat to medium. Add butter to the skillet and sauté the garlic and chili flakes for about 30-60 seconds.
- 4. (Optional: Deglaze with a splash of white wine and let it reduce slightly.)
- 5. Add the heavy cream and bring to a gentle simmer. Stir in the Parmesan in 2-3 portions until melted.
- 6. Stir in the reserved pasta water and lemon juice. Let the sauce simmer for 2-3 minutes until slightly thickened.
- 7. Add the cooked pasta to the skillet and toss well with the sauce. Let it sit in the sauce for 1-2 minutes to absorb the flavors.
- 8. Fold in the parsley and the reserved shrimp, heat briefly, and serve immediately.
