Gnocchi Verdi
Green gnocchi with spinach and ricotta, a special Lombardy dish.

Ingredients
- 600 g Spinach
- 6 tbsp Butter
- 200 g Ricotta
- 2 piece Eggs
- 100 g Flour
- 100 g Grated Parmesan
- Salt
- Pepper
- Nutmeg
Instructions
- 1. Heat 2 tbsp butter in a saucepan, add the spinach and simmer over medium heat until the liquid has evaporated.
- 2. Add the ricotta. Stir in the eggs, together with 1/4 of the Parmesan cheese, and mix well. Season with salt, pepper and nutmeg and chill for about 1/2 hour.
- 3. Bring 5 l of water to the boil with salt.
- 4. Form small balls from the spinach-ricotta mixture (between floured hands).
- 5. Place the balls in the lightly simmering water and leave to simmer until they feel firm (about 5-8 minutes).
- 6. Lift out of the water with a slotted spoon, drain well and keep warm.
- 7. Put 2 tbsp of melted butter in a fireproof dish.
- 8. Place the gnocchi in it, sprinkle with the remaining cheese and top with butter flakes.
- 9. Bake the gnocchi in the oven until the cheese melts.
